Freezer Meal Slow Cooker Honey Soy Chicken





Im all about quick and easy meals during the week.  Add to that it being delicious and, well, weve got ourselves a winner!  This is one of those great make-ahead meals that can be tossed in the slow-cooker right from the freezer if desired {add an additional half hour to hour to the cooking time}.  We love it with rice and sprinkled with scallions and sesame seeds.



Slow-Cooker Honey-Soy Chicken

2 pounds boneless, skinless chicken thighs or 2-3 boneless, skinless chicken breasts
1/3 cup honey
1/3 cup soy sauce
1 Tablespoon oil
2 Tablespoons rice vinegar
1/2 - 1 teaspoon freshly grated ginger
2 cloves garlic, finely minced

at time to cook:
1/4 cup chicken or vegetable broth
3 scallions, sliced, optional
sesame seeds, optional

Prep For the Freezer:
Add all ingredients except the broth to a gallon-size freezer bag.  Label bag with name and cooking instructions - including to add the 1/4 cup broth.  Freeze for up to 3 months.

To Cook:
Remove bag from freezer 24 hours prior to cooking and allow to un-thaw in the refrigerator.  Empty bag into slow-cooker crock, squeezing out all the juices, and discard freezer bag.  Add 1/4 vegetable or chicken broth to the crock.  Cook on low, covered, 4 hours for thighs and 3 hours for breasts.  Serve with a sprinkle of sesame seeds and scallions if desired.
